Gremolata Potatoes
Lemon, garlic and parsley add a zesty-fresh flavor to mashed potatoes. Serve with simple grilled meat or fish.
Ingredients
Gremolata
- 1/2 cup finely chopped parsley
- 1 teaspoon finely minced garlic
- 1 teaspoon finely grated lemon zest, about 1 lemon
- 1/4 teaspoon Kosher salt (or scant 1/4 teaspoon table salt)
- 1/4 cup extra virgin olive oil
Potatoes
- 1-1/2 cups water
- 3 tablespoons olive oil
- 3/4 teaspoon salt
- 1-1/2 cups milk
Preparation Instructions
- Combine parsley, garlic, lemon zest and salt in a small bowl. Stir in olive oil.
- Prepare potatoes per package directions replacing butter with olive oil.
- Serve potatoes topped with gremolata.
