Gremolata Potatoes

Gremolata Potatoes

Lemon, garlic and parsley add a zesty-fresh flavor to mashed potatoes. Serve with simple grilled meat or fish.

Ingredients

Gremolata

  • 1/2 cup finely chopped parsley
  • 1 teaspoon finely minced garlic
  • 1 teaspoon finely grated lemon zest, about 1 lemon
  • 1/4 teaspoon Kosher salt (or scant 1/4 teaspoon table salt)
  • 1/4 cup extra virgin olive oil

Potatoes

  • 1-1/2 cups water
  • 3 tablespoons olive oil
  • 3/4 teaspoon salt
  • 1-1/2 cups milk
Preparation Instructions
  • Combine parsley, garlic, lemon zest and salt in a small bowl. Stir in olive oil.
  • Prepare potatoes per package directions replacing butter with olive oil.
  • Serve potatoes topped with gremolata.

Makes 8 servings, about 1-1/2 teaspoons per serving
