Southwest Mashed Potatoes
Creamy mashed potatoes with regional flair, these potatoes boast a robust blend of cumin, oregano, red bell peppers, green chiles, and cheddar cheese.
Ingredients
- 1 package Nana’s Own Mashed Potatoes
- 1 tsp. Salt
- 1 tsp. Cumin
- Pinch Oregano, ground
- Pinch Red pepper flakes
- 3 cups Water, boiling
- 1 1/2 tsp. Chicken base
- 1/3 cup Corn, canned, drained
- 1 1/2 tbsp. Green chiles, diced, drained
- 1 ounce Cheddar cheese
- 1 tbsp. Queso fresco (optional)
- 1 tbsp. Green onion, chopped
Preparation Instructions
- Combine potatoes and seasonings.
- Stir chicken base into boiling water. Whisk in potato mixture until smooth.
- Stir in green chiles and cheddar cheese.
- Sprinkle with queso fresco (optional) and green onions. Keep warm until ready to serve.
**Serving Idea: For Southwest empanadas, place mixture on pastry rounds. Fold in half; crimp; bake until brown.
**Note: Queso is a fresh Mexican-style part skim milk cheese.
